Ingredients
2 tbsp Olive oil
4 large eggs
10-12 peeled tomatoes - finely diced
1 finely sliced onion
1 finely sliced red bell pepper
2 tablespoons crumbled feta cheese
1/3 cup roughly chopped fresh flat-leaf parsley
3 finely chopped garlic cloves
Salt to taste
Pinch of grounded pepper
1 teaspoon ground cumin
1 teaspoon red chilli powder
Instructions
Preheat the oven to 190 degrees Celsius.
Coat a large, oven-proof pan with olive oil.
Add onions, bell peppers, tomatoes, salt, and black pepper, and stir to combine.
Cook in the oven for 5 minutes
Stir it once to prevent burning
Remove skillet from the oven
Add garlic, cumin, paprika, and cayenne, and stir again.
Create four wells in the mixture, and crack one egg into each well.
Return the pan to the oven and bake for 7-10 minutes, until the eggs are just set.
Sprinkle feta cheese and parsley over the top, and serve.
