Shakshuka - Low Calorie

Ingredients


  • 2 tbsp Olive oil

  • 4 large eggs

  • 10-12 peeled tomatoes - finely diced

  • 1 finely sliced onion

  • 1 finely sliced red bell pepper

  • 2 tablespoons crumbled feta cheese

  • 1/3 cup roughly chopped fresh flat-leaf parsley

  • 3 finely chopped garlic cloves

  • Salt to taste

  • Pinch of grounded pepper

  • 1 teaspoon ground cumin

  • 1 teaspoon red chilli powder



Instructions

  • Preheat the oven to 190 degrees Celsius.

  • Coat a large, oven-proof pan with olive oil.

  • Add onions, bell peppers, tomatoes, salt, and black pepper, and stir to combine.

  • Cook in the oven for 5 minutes

  • Stir it once to prevent burning

  • Remove skillet from the oven

  • Add garlic, cumin, paprika, and cayenne, and stir again.

  • Create four wells in the mixture, and crack one egg into each well.

  • Return the pan to the oven and bake for 7-10 minutes, until the eggs are just set.

  • Sprinkle feta cheese and parsley over the top, and serve.
