Berrylicious Oats Granola Bars made with Dates




Ingredients


  • 1 cup deseeded dates

  • 1 ½ cup instant rolled oats

  • 1 ½ cup finely chopped almonds

  • 2 tbsp pumpkin seeds

  • 1 tbsp sunflower seeds

  • ¼ cup peanut butter

  • ¼ cup honey

  • 2 ½ tbsp chopped black raisins

  • 2 ½ tbsp chopped raisins

  • 2 ½ tbsp chopped cranberries

  • Optional - add any dried berries if available





Instructions

  1. Blend dates in a blender until smooth without water. Set aside.

  2. Lightly roast oats in a deep non-stick pan over low heat for 5 minutes, stir it continuously, and set aside.

  3. Over medium heat, roast almonds, pumpkin seeds, and sunflower seeds in a deep non-stick pan for 3 minutes, stir it continuously, and set aside.

  4. In a broad non-stick pan, combine peanut butter and honey. Cook on low heat for 2 minutes while stirring continuously, and set aside.

  5. Combine all the ingredients together

  6. Mix it well and set aside.

  7. Grease and line a tray with butter paper. Pour mixture into the tray and flatten it with your palm.

  8. Cut the batter into equal rectangular bars, while it's still hot

  9. Set it in the refrigerator for 20 minutes

  10. Serve this guilt free snack or store it in an airtight container

  11. And enjoy!
