Bajra Dosa



Ingredients


  • ½ cup bajra

  • ½ cup urad dal

  • ½ cup rice

  • Salt to taste

  • Water as needed

  • 3-4 tbsp oil or ghee




Instructions

  1. Rinse rice and bajra in a large pot at least thrice.

  2. Soak rice and bajra in water for 4 hours.

  3. In another pot, wash urad dal and soak it for 4 hours.

  4. Drain water from both pots.

  5. Blend urad dal with enough water (about 3/4 to 1 cup) until smooth and frothy.

  6. Transfer to a large bowl.

  7. Blend rice and bajra in the same jar with little water until smooth.

  8. Mix the batter well.

  9. Cover the bowl and ferment in a warm place for 6 to 8 hours.

  10. After fermentation, add salt and adjust the consistency with water until it is neither too thick nor too thin.

  11. Grease and heat a dosa tawa/griddle. Pour 1 ladle of batter onto the centre and spread it into a thick or thin dosa.

  12. Drizzle oil around the edges and cook until the edges leave the pan.

  13. Flip and cook the other side until crisp.

  14. Serve hot with any chutney.
